      Description

Noticed an issue where when the timestamp is retrieved from the resultset depending on the jdbc driver you could get a time skew equal to that of the Timezone the driver is using. The creation of the dates are correct since Date and Instant are using UTC but when the timestamps are read from the resultset the drivers may use a different timezone and therefore get it wrong. The solution employed is to not leave it up to the driver to decide and force it to load in UTC.

Also removed the use of java.util.Date in favor of Instant as a bonus.
